Proposal
Create the tag enby=* as a counterpart of male=* and female=*.
This tag is for places that primarly or exclusively for non-binary (enby) people, so it should generally not be used when unisex=yes.
Rationale
The main use of this tag would be for toilets and enby-only spaces. While these may be very rare, I think it's better to have a standard rather than having a mess of people using different tag names like nb
, enbies
, nonbinary
, third_gender
, etc.

The tag gender_access=* likewise shows no third gender values (children

Rendering
The half-female half-male restroom-style stick figure is the only rendering I can think of. Unfortunately this maybe misread as the unisex symbol. One option would be adding some sort of three symbol inside yhe stick figure to allude to the idea of third gender.
