polder = land or canals/ditches ?

@Multimodaal:In the definition of water_system=polder, it is written "Low-lying tract of land enclosed by dikes". But in the use of these tags, nobody put them on the lands but on the waterways (see https://overpass-turbo.eu/s/1rrI). Maybe the definition needs some improvement, no ? Thanks for your contribution. You were right that the first definition focussed to much on the land only (and did not mention) , but actually "polder" is a property that can refer to the water but also the land and also the whole (entire island: water + land in it): one island may be a polder, while the neighbouring island may very well be a boezem. I will revert it to the former version and try to take some of your changes along
