Maybe it's better to tag these places with amenity=restaurant in combination with either one of those or with a dedicated cuisine=osmica.

Use of restaurant and cuisine keys was my first guess, but I noticed this is a peculiar POI: not actually a restaurant because it is a private house periodically opened to public; moreover, in osmiza you won't find waiters nor plates, cutlery and towels. - It is indeed very similar to a Strausse or Heuriger. Hence, I think it is fine to catalogue it under the broad osm definition of an amenity=restaurant. If the place is open only certain times in the year you may add this info with the opening_hours=* or even seasonal=*. For a self-service restaurant you may add self_service=* although if not served by a waiter you seem to be served directly by the owner in most places. So in my opinion, there seems no need for a dedicated amenity=* value that makes it harder for data consumers to interpret amenity=osmica as an eating place, so it probably won't be rendered on any map nor come up when you search for a nearby place to eat.
